Mix all ingredients until fully dispersed into the meat
Deer, Elk, Moose, Etc.
fine or course pepper both work (use your favorite)
fine or coarse salt both work (use your favorite)
Cayenne or red pepper (use your favorite)
sweet baby rays is a good cheap sauce (use your favorite)
these are more personal preference then anything else
Dice finely (you can seed them or leave in the seeds, the seeds will add more heat)
i use sharp cheddar, but use what you like the most
Red or White Onions both work
i use asiago or cheddar buns from the bakery section
Add a footnote if this applies to your business
Use the ingredients listen above, you do not need to use those exact ingredients, you can substitute the salt and pepper with your favorite steak seasion if you wish. which ever you chose to use mix them in evenly into the meat. the bbq sauce will not over power the meat, it is in there for more of a slight seasoning. Form the burger patty to the disired size.
Once the patty is mixed set aside while you prep the other ingredients.
I dont know about you, but i love my burger buns toasted slightly. heat up a skillet on the stove top (you will be using this same skillet for the patties after this)
Once you cut the buns in half, slather in insides with some mayo (i like to add alittle hot sauce as well to kick up the spice) lay the buns on the skillet until you get a good golden brown, and set to the side
Once you had finished toasting the buns for the burgers it is now time to cook the meat. If you like your jalapenos and onions grilled this would be the time to do it (so you can top the meat with them along with the cheese) if you are not grilling the jalapenos, lets start the meat. You will be limited to the amount of patties cooked at the same time by the size of the skillet so plan accordingly. Lay down a small slice of butter on the skillet in each location you will be added a patty. lay the patty down on top of the butter and cook a few minutes per side. the butter will create a awesome crunch on the outside and also aid in keeping the patty nice and moist. once it is done you can flip the patty to the other side. At this time you can add another slice of butter or just grill that side with the residual grease/butter left over from the first time.
Once the last side of the patty is near completion you can go ahead and add the toppings. i like to add a whole sliced onion and jalapenos then cover with cheese, this created a shell that holds all the topings into place. once the toppings are on cover the skillet to steam and melt the cheese. leave covered for a minute or two.
Take the patty off the skillet and lay on the nice toasted bun you made earlier.
i dont typically use lettuce or tomatoes with my burgers but you can add those to the top of the patty and serve at this time.
My kids really like tatter tots so i typically pair the burger with them. however you can pair with french fries, sweet potatoe fries or a fresh salad
