Lets Gets Started

Bulgogi Marinade

as with any marinade, the longer you have the meat sit in the marinade the better the meat will taste.

Roasted Sesame Oil

1/4 Cup

you do not want to ue any other oil for this! Make sure that you use the roasted oil as well, this will give the meat that perfect smell and taste.

Garlic

4 Cloves

You will want to mince this garlic. you can either purchase it already minced or you can mince it yourself 

Ginger

1 tbsp

you will want to grate this to allow the flavor of the ginger to disperse into the marinade a lot better

Soy Sauce

1/4+ cup

this is always changing for me, you can add more soy if you like to have the meat more on the saltier side. I like to have a good portion of the meat covered in the soy and sesame oil

Brown Sugar

1/2+ cup

the brown sugar will created a awesome glaze on the meat when it is cooking. the more sugar you put in the more it will have the tacky glaze.

Lime

1 whole

i like to add a lime or 2 into the marinade for the acid to help break down the meat slightly 

Water

Varies

you will add HOT water to the marinade to break down the sugar and help cover the rest of the meat


Taco Ingredients

You can use any portion of your wild game for this. i perfer to use heart (it is easier to get weary people to try) i have used roast and scrape meat to make this as well

Wild Game

Depends on Cut

If you are using hearts, use 2-3 hearts depending on the size of the crow.  otherwise you will want 1 or 2 lbs of  roast. you will slice the meat into the desired size so it fits into the taco

Flour Tortillas

1-2 bags

Obviously the amount of tortillas is based on the crowd you are feeding. you will want to use the small flour tortillas for this recipe. you can lightly fry them and warm them to the way you like. 

Purple Cabbage

1 small

you will cut this into slivers to serve on top of the tacos

Cilantro

1/2 Bunch

some people do not like cilantro so you can remove this from one of the toppings, I however really like it.

Avocado

1-2

I am pretty sure a taco would actually not be a taco if it did not have an avocado on it. 


Sauce Ingredients

You can use standard store bought sauce for this or you can use the sauce using the ingredients below

Sour Cream

1/3-1/2 cup

Mayonnaise

1/4 cup

Garlic Powder

1-1.5 tsp

 

Hot Sauce

1-2 tsp

i like to use Sriracha for this however you can use any hot sauce that you like. 

Lime

1-2 small

 

Preparation

Meat prep and Marinade

Once you have mixed all the ingredients of the marinade into a bowl set it aside. Slice the meat into thin slices so that they are easily eaten off a taco. Cutting the meat into smaller pieces will  also allow the marinade to get into the meat better. once all the meat is cut you can place the meat in with the marinade and let it st for a minimum of 30 minutes. I prefer to  let the meat sit in the marinade over night. 

Cooking

Heat a large pan or skillet over high heat. place the meat into the skillet in batches so you do not cool down the pan. let the meat sit for a little and start to brown on one side. once the meat is browned  on one side begin to stir so that the meat gets cooked and  will glaze the meat all over.  Once all the meat  is cooked put to the side 

Sauce

mix all the ingredients together so that you have a good smooth sauce. 

Serving

whether you heat up the tortillas or not set up the desired amount of tortillas. place the meat on the tortillas and all the toppings and start shoving your face full of these things.
